腐乳扣肉

1、主料:五花肉500克,腐乳汁60克。调料:香油50克,白汤360克,湿淀粉30克,白糖5克,酱油25克,味精3克,姜末1克。

2、将肉切成长8厘米、宽0.6厘米的条。

3、把腐乳汁在准备盛肉的碗中先抹上一层,然后把切好的肉条皮向下整齐地码入碗中,再将剩余的腐乳汁浇在上面,加入白汤(100克)、白糖(2克)、味精(1克),上笼屉用旺火蒸7~8分钟后取出来,把汤灌入另一碗中,蒸好的肉扣在盘里。

4、炒勺内放香油(1半),在旺火上烧7~8成热,下入姜末,白汤(余量)、白糖、酱油、味精和蒸酱肉的原汤。烧开后,用湿淀粉调稀勾芡,再滴入香油,浇入蒸好的肉上即成。
