卤鸡爪时先用腌料腌过,使其肉质鲜嫩多汁,能有效去除肉本身的腥味。具体做法如下:

一、主料:

鸡爪 、辅料、葱、姜、冰糖、卤料、盐、老抽 。

二、制作过程:

1、将鸡爪洗净,剁去指甲;

2、葱姜切片,准备冰糖适量;

3、锅内放适量清水,放入鸡爪,焯四五分钟再捞出,再次将鸡爪洗净,放入腌料进行腌制,再晾凉一段时间,去除肉本身的腥味;

4、锅内放适量清水,放入料包,葱姜、冰糖;

5、加入鸡爪,烧开;

6、放适量老抽,盐,中火煮30分钟后,熄火,浸泡一段时间即可。
