油卤的做法和配方

1、菜油10千克、特辣的糍粑辣椒1500克、大葱500克、生姜250克、洋葱200克、芹菜250克、八角30克、山奈10克、香叶8克、小茴香15克、丁香2克、香果6克、桂皮25克、白蔻8克、陈皮4克、花椒40克?。

2、大葱拍破后切段,生姜、芹菜均拍破,洋葱切块待用。?

3、锅入菜油烧至九成热,陆续放入大葱、生姜、洋葱和芹菜炸至金黄色时,打去料渣不用,等到油温降至五六成热时,再把热油舀入装有糍粑辣椒的不锈钢桶里搅匀,入置两三天后打去桶里的糍粑辣椒,即成卤油半成品。?

4、把剩余的香料放入沸水锅里煮约6分钟,捞出沥水。锅入半成品卤油上火烧至四成热时,下入煮过的香料,开小火慢慢提炼出香味后,离火浸泡2天,打去香料渣子,即得卤油。?
