1、包饺子面。500克面粉加50~60%的温水,放2%的精盐,充分揉和,醒面30分钟开始操作。面中放盐不仅会增加面筋,出锅的饺子不粘皮。

2、擀面条面。500克面粉加35~40%的温水,放2%的精盐及少量食用碱,醒面30分钟。这样不仅会增加筋力,而且口感光滑。
