蒲菜鸡粥

1、材料:蒲菜250克、鸡胸脯肉150克、猪肉(肥瘦)50克、鸡蛋清50克、火腿50克、籼米粉35克、大葱5克、姜汁3克、料酒8克、盐4克、味精2克、植物油10克、淀粉5克。

2、鸡脯肉、肥膘肉洗净剁成茸,用刀背拍细;蒲菜氽水洗净,切成丁;将鸡茸中加入米粉,用鸡清汤稀释后,用纱布过滤去残渣,再加入鸡蛋清、精盐、葱姜汁、料酒、湿淀粉搅和成稀糊状;

3、坐锅点火,放油滑锅,加鸡汤烧沸,再徐徐倒入鸡粥糊,用手勺不断搅至黏稠,再放入蒲菜丁,加精盐、味精继续搅拌,淋明油少许,装入汤碗,撒上火腿末即成。
