腌制的板鸭如何做

1、蒜头去皮捣烂,辣椒切碎,将蒜末、姜末、辣椒、五香粉、精盐等放入大缸内加水25千克混合拌匀。

2、肉鸭宰杀开膛洗净,切去翅、掌、下颚舌,放入调好味的缸中腌24小时后取出,用小竹条将鸭子撑开成状。

3、地炉中烧木炭,然后盖上炭灰成半明火,炭上置铁条,将鸭放铁条上烘烤3.6小时左右。

4、注意随时观察翻动,使烘烤均匀,防止烧焦,待呈金黄色时取出,晾凉包装。 食时将板鸭置锅中旺火蒸5-8分钟,取出晾凉,切成片或块状装盘食用。
