烫面与死面有何区别

烫面是用沸水(约65至100摄氏度)和面,边加水边搅拌,待稍凉后揉合成团,再做成各类食品。其原理是利用沸水将面筋烫软,及部分的淀粉烫熟膨化,降低了面团的硬度,所以水温愈高,沸水量愈多,做出的产品愈软,吃起来较无劲道,且会有粘牙、粘手、粘工作板的缺点。

死面是用凉水现和现用的面,其比较耐煮,口感劲道,有嚼劲,所以适合做煮、烙、煎、炸等食物,如水饺、馅饼、烧卖、锅贴等。
