炸粘丸子的做法和配方

1、主料:猪肋条肉(五花肉)300克。

2、调料:鸡蛋60克,大葱5克,姜5克,椒盐3克,辣酱油5克,味精2克,花生油75克,料酒15克,淀粉8克,各适量。

3、把肥瘦肉剁成泥,放入碗内,加精盐、味精、料酒、葱、姜末、鸡蛋、淀粉加水调成的湿淀粉约15克搅拌成馅。

4、锅内放油,烧至六七成热,把碗内的肉馅用手挤成直径约2.5厘米的丸子,放入油内炸呈金黄色时,捞出,再把油烧热至八九成热时,把丸子复炸一下,随即捞出,控去油,盛入盘内即成。食时蘸花椒盐或辣椒油。
