鱼馅制作方法

1、原料:大草鱼或乌鱼1条约1000克、韭菜300克、鸡蛋清2个、精盐15克、胡椒粉5克、料酒25克、味精15克、鸡精15克、香油25克、精炼油30克。

2、草鱼宰杀后洗净,去掉头尾、骨刺及鱼皮,取净鱼肉绞成蓉;韭菜择洗净,切为细粒,加入香油、精炼油拌匀。

3、将鱼头、鱼骨放入锅中,掺入清水,加入胡椒粉、料酒、鸡精,上火熬至汤色乳白时,滤去料渣,即成鱼汤。

4、鱼肉茸加入肥膘肉泥和匀,再加入精盐、味精、鸡蛋清搅拌,边搅边加入冷鱼汤,直至搅拌上劲且鱼汤加完,接下来与韭菜粒拌匀,即成。
