米浆做卷粉皮的调配法

1、将优质的大米放入水中浸泡一夜左右;

2、用石磨把大米磨成米浆;

3、在铁盘中刷少许的熟油;

4、放入一定数量的米浆,搅拌均匀了,双手握住铁盘,不停地把米浆浪开;

5、如果米浆敷得太厚,做出来的粉皮就不好吃,甚至会粘牙;太薄的话,蒸熟后的米皮又无法从铁盘中剥出,所以把握好量;

6、把米浆浪好了,将铁盘置于蒸笼中,用大火蒸5至10分钟,取出,米浆即成粉皮;

7、最后将粉皮剥下,挂在竹竿上晾晒;

8、冷却,叠在一起,米
