红烧大虾做法攻略

1、大对虾四对(约重1000克),白糖75克,鸡汤150克,醋、酱油各5克,精盐0.5克,味精1克,绍酒15克,葱2克,姜1.5克,熟猪油500克(约耗50克)。

2、做法:将对虾头部的沙包去掉,抽去虾肠,留皮,用清水洗净。葱、姜切成片。炒锅内放猪油,在旺火上烧至八成热,放入对虾,炸至五成熟捞出。

3、炒锅内留油50克,下葱、姜炸出香味,再放入鸡汤、白糖、醋、酱油、精盐、绍酒、味精及大虾,用微火(火靠)5分钟,取出大虾(捞出葱、姜不用),整齐地摆入盘内,然后将原汁浇在大虾上即成。
