厨师如何做酸辣汤

1、准备豆腐30克,熟鸡肉(或火腿)、冬菇、熟瘦猪肉丝、水发海参、水发鱿鱼各15克,鸡蛋1个,淀粉25克,葱花3克,酱油10克,猪油30克,味精、胡椒粉各1克,保宁醋6克,精盐5克,鸡汤750克。

2、将豆腐、冬菇、海参、鱿鱼分别切成细丝,同熟肉丝、熟鸡丝放入锅内,加鸡汤、精盐、味精、酱油,用旺火烧至沸滚,再放湿淀粉勾芡后,改小火加打散的鸡蛋。

3、将胡椒粉、保宁醋、葱花及少许猪油放入汤碗内。在锅内蛋花浮起时即改旺火,至肉丝滚起,冲入汤碗内即可。
