四川正宗清汤火锅锅底是怎么做的

材料:

猪棒子骨300克、牛棒子骨300克、鸡骨架100克、生姜10克、大葱30克、料酒20克、鸡精30克、味精15克。

做法:

1.将猪棒子骨、牛棒子骨洗净后敲破,鸡骨架洗净,生姜拍破,大葱挽结;

2.先将猪棒子骨、牛棒子骨、鸡骨架入沸水锅中焯一会水,捞出放入清水锅中,加入生姜、大葱、料酒,用大火烧开后,转用小火熬至汤色乳白,打去料渣,即得鲜汤;

3.调入鸡精、味精、盐,放入一些番茄、香菇之类的提鲜,即可烧开涮菜。如果汤色看起来比较清淡,可适量加入一些猪油、鸡油等。
