1、猪油或肥肉沾上污物杂质时,将猪油或肥肉部分,放入30至40度的温水中浸泡一下,再用干净的包装纸慢慢擦洗,即可干净;

2、先用开水将猪舌浸泡至舌苔面发白,再用小刀刮去苔白,清洗即干净;

3、腰臊是异味来源,在整理时,先撕去外层薄膜,将其从中间剖开,再将半片内层朝上放平,用手拍打四边,内层的白色部位即显露出来,用刀将其片下即可;先将猪腰切为腰花,用清水洗,捞出沥干,然后再加入适量白酒揉搓,再用清水洗3至5次,待烹制时用开水烫一下,猪腰宜用些原味调料,腥味即除。
