江西腊肉的制作方法

1、切条、腌制:将肉切成长30厘米,宽3至5厘米的条,用竹扦扎些小眼,用经过炒烫晾至温热的花椒和盐进行揉搓,搓后放入瓷盆,皮朝下肉朝上,一层层码放,最上一层用重物压住;

2、烟熏:大铁锅内放锯末,上架铁箅子,把晾好的肉置其上,盖上锅盖,然后烧火。当锯末受热冒烟时停火,肉熏上黄色,其水分已干即成;

3、在肉腌好后,吊挂在屋外阳光下晒,开始每天晒1次,以后每隔2天晒1次,晒约2个月,即可成为色黄发干的腊肉;

4、挂于通风阴凉处,直至风干。
