无油经典巧克力

1、材料:蛋白(或全蛋)200g(约6个),可可粉50g,砂糖100g,牛奶50ml,高筋面粉50g。

2、高筋面粉和可可粉混合均匀;

3、蛋白和砂糖倒入料理盆,打至8分发泡,也就是大概湿性发泡的样子,将打蛋器拉起,蛋白泡沫的尖端会下垂,呈弯钩状(如果用全蛋,请将全蛋+砂糖打发至呈粘稠浆糊状 PS:不是把蛋+糖打散就可以。请电动打蛋)不要打发过度;

4、倒入牛奶,用刮刀轻轻切拌;

5、高筋面粉和可可粉过筛筛入;

6、大幅度翻拌混合;

7、混合好的面糊是这个样子;

8、倒入模子,轻轻抹平表面;

9、烤箱预热180度,中下层上下火180度20~25分钟即可,趁热倒扣脱模;

10、放架上冷却,切片食用。
