酥炸鱼头的腌制方法

蒜切碎、姜切碎、葱切段、鱼头洗干净捞起加入少许生抽、盐、油、料酒、混合蒜、姜腌半个小时;青椒、红椒去籽洗干净切块,小半碗扒汁加入少许生抽、1小茶匙口急汁、适量砂糖、水、生粉、少许油麻油混合搅拌均匀做成调味汁备用;适量万用炸粉加上少许盐混合搅拌均匀,鱼头均匀拍上炸粉下锅炸至金黄色至熟捞起备用;蒜姜爆香油锅,倒入双椒和少许料酒、少许盐爆炒片刻后倒入炸好的鱼块一起翻炒;片刻后倒入调味汁和葱段翻炒均匀至入味收汁即可。
