灌汤包的做法及配方

1、材料:主料:面粉1000克、温水600克、猪五花肉700克、肉皮冻280克、蟹肉160克、蟹黄、酱油各40克、猪油100克。辅料:料酒6克、香油8克、白糖、葱花、姜末各5克、精盐15克、胡椒粉、味精各1克。

2、制作:(1)将面粉加水和匀揉透,放置片刻。

(2)猪肉剁成肉茸,蟹肉剁碎,锅内加猪油烧热,放入蟹肉、蟹黄、姜末煸出蟹油,与肉茸、皮冻、酱油、料酒等调拌成馅。

(3)将面团搓成长条,揪成每50克4个的面坯,擀成圆皮,加馅捏成提褶包,上蒸笼用旺火蒸10分钟即可。
