腌制干锅桂鱼怎么做

1、主料:桂鱼仔750克。配料:鲜尖椒30克。调料:植物油1000克(实耗50克),精盐3克,味精2克,白醋5克,料酒20克,豆瓣酱10克,辣酱5克,紫苏叶10克,干椒30克,大蒜子25克,葱20克,姜20克,红油5克,香油2克,鲜汤500克。

2、做法:桂鱼仔去鳞、鳃、内脏,剞上一字花刀,用盐、葱(15克)、姜(15克)、料酒汁腌制入味待用。大蒜子去蒂;红尖椒切滚刀块;紫苏叶切碎;干椒切段;余下的5克姜切片,葱切段。锅置旺火上,下入植物油,烧至七成热时,下入桂鱼仔炸至金黄色捞出。锅内留余油,下入姜片、豆瓣酱、辣酱、大蒜子、干椒段煸香,下入桂鱼仔,烹入白醋、料酒,下红尖椒、盐、味精、鲜汤,调好滋味,淋入红油,放紫苏叶,旺火将汁稍微收干,出锅装入干锅内,撒葱段即成。
