炒饼窍门

1、饼丝分为素炒和肉炒,通常素炒最为常见,加入的配擦更为简单,如一些豆芽青菜类,炒好之后鲜香美味。为了防止糊锅,最好是将菜和饼丝分开炒,各自炒好之后混合翻炒,想要口感好,水的用量要掌握好,一定要焖一分钟,快收干时再翻炒,翻炒均匀后既可以关火了。

2、如果是自己做熟饼,和面时尽量将面和的硬些才更加劲道,炒出的饼丝味道更好。直接购买更为方便:准备适量饼丝,然后放在一边备用。再准备一些包菜等自己喜欢的这些菜清洗干净备用。
