清蒸海鱼的做法和配方

1、材料:鲑鱼1条,重500克左右,水发玉兰片50克,水发香菇25克,番茄50克,菜心50克,花生油1000克(实耗75克),鸡油10克,料酒25克,葱15克,姜8克,蒜10克,味精2克,盐5克,鲜汤适量。

2、将鲑鱼去鳞、鳃、内脏,洗耳恭听干净后放在案板上,用刀在鱼体上每隔1段斜剞一刀纹,用盐抹匀鱼身,腌渍片刻;葱去皮,洗净,切斜段;姜、蒜去皮,洗净,切片;玉兰片洗净,切薄片;香菇洗净,切去根蒂;番茄用开水烫过,去皮,去籽,切成斜块;菜心洗净,用开水焯烫断生;

3、将锅置于火上,放油烧至六七成热时,将鱼下锅速炸一下,炸至鱼体发挺、色泽微黄,捞出控油,放至盘内,加入料酒、盐、味精、鸡油和少许鲜汤,均匀摆上玉兰片、香菇、葱段、姜片、蒜片,上屉,架在水锅上,用旺火、沸水、足气蒸(以水开后冒气汁)10-15分钟,蒸至鱼珠突出、鱼肉籽生、嫩熟时取出,拣去葱段、姜片、蒜片,把蒸鱼的汤滗入锅内;

4、将锅架在火上,再放入菜心、番茄块,烧开,滚上一滚,淋入鸡油,浇在鱼体上即成。
